The company proceeds at the time of collection in October and in November when the olives are still green and even when, in the vain stage, they start to change in color, passing from green to yellow to dark purple.

The method is the traditional one of the burning and consists in passing with the hands between the tree branches of the small hand plastic combs or tires and then drop the olives on special towels around the trunk; This method, from research carried out by the company, although economically is the most expensive because it requires a huge use of work in terms of time, it reveals itself the most efficient in order to ensure a good vegetative and productive balance to the plant.
